Pira Caldo (Paraguay)

500 g Fish Fillets
1 Onion, Chopped
2 Tomatoes, Chopped
1 Bell Pepper, Chopped
3 Garlic Cloves, Minced
1 Fish Stock
Salt and Pepper to Taste
Fresh Cilantro, Chopped, for Garnish

In a large pot, sauté the onion, tomatoes, bell pepper, and garlic until they are soft.

Add the fish fillets to the pot and cook until they are white and flaky.

Pour in the fish stock and bring the soup to a boil. Reduce the heat and let it simmer until the flavors are well combined.

Season the pira caldo with salt and pepper to taste, and garnish with fresh cilantro before serving.
