Bolinhos de Bacalhau (Brazil)

500 g. Salted Cod, Soaked and Shredded
2 Potatoes, Cooked and Mashed
1 Onion, Chopped
2 Eggs
¼ tsp. Salt and Pepper, to Taste
500 ml. Oil, for Frying

In a large bowl, combine the shredded cod, mashed potatoes, onion, eggs, salt, and pepper. Mix until everything is well combined.

Shape the mixture into small balls or cakes.

Heat the oil in a frying pan over medium-high heat. Once the oil is hot, fry the bolinhos de bacalhau until they are golden on all sides. Be careful not to overcrowd the pan, so fry them in batches if necessary.

Once the bolinhos are cooked, remove them from the oil and let them drain on paper towels. Serve them hot.
