Rocoto Relleno (Peru)

4 Rocoto Peppers
300 g. Ground Beef
1 Onion, Chopped
2 Garlic Cloves, Minced
¼ cup Raisins
¼ cup Chopped Black Olives
2 tbsp. Chopped Fresh Parsley
½ cup Grated Cheese
1 Egg
Salt and Pepper, to Taste
Preheat the oven to 180°C.
Cut the tops off the peppers and remove the seeds.
In a frying pan, sauté the onions and garlic until soft. Add the ground beef, raisins, olives, and parsley and cook until the beef is browned.
Spoon the beef mixture into the peppers and place the peppers in a baking dish.
In a bowl, beat the egg and mix in the cheese. Spoon this mixture over the peppers.
Bake for 20 minutes, or until the cheese is golden and bubbling.
