Olluquito con Charqui (Peru)

1 kg. Olluco Tubers, Peeled and Chopped
200 g. Llama Charqui (or Beef Jerky), Soaked Overnight and Shredded
1 Onion, Chopped
2 Garlic Cloves, Minced
2 tbsp. Oil
Salt and Pepper, to Taste
In a large frying pan, heat the oil over medium heat. Add the onion and garlic and sauté until soft.
Add the charqui to the pan and cook until it's heated through.
Add the olluco tubers, salt, and pepper to the pan and mix everything together.
Cover the pan and let the mixture simmer for about 20 minutes, or until the olluco is tender.
Serve hot.
