Ackee and Saltfish (Jamaica)

300 g. Salted Cod
1 Can Of Ackee, Drained
2 Onions, Chopped
2 Garlic Cloves, Minced
1 Scotch Bonnet Pepper, Chopped
2 Tomatoes, Chopped
1 Red Bell Pepper, Chopped
2 Spring Onions, Chopped
1 tsp. Dried Thyme
60 ml. Vegetable Oil
Salt and Pepper to Taste

Soak the salted cod in cold water for at least 2 hours, or overnight if possible. Change the water several times. Drain and flake the fish.

In a large frying pan, heat the oil over medium heat. Add the onions, garlic, Scotch bonnet pepper, tomatoes, and bell pepper. Cook until softened.

Add the flaked cod, ackee, spring onions, and thyme to the pan. Stir gently to combine. Cook for about 10 minutes.

Season with salt and pepper to taste. Serve hot, often with Johnny cakes or fried dumplings.
