Roti (Trinidad and Tobago)

Ingredients

Method

500 g. All-purpose Flour
1 tsp. Baking Powder
½ tsp. Salt
300 ml. Water
120 ml. Vegetable Oil, Plus More for Cooking

In a large bowl, combine the flour, baking powder, and salt.

Gradually add water while kneading to form a soft dough.

Cover the dough and let it rest for about 30 minutes.

Divide the dough into six equal parts and roll each part into a thin circle.

Heat a small amount of oil in a large pan over medium heat. Cook each roti for about 1 minute on each side, or until golden brown spots appear.

Serve warm with curry or your favorite filling.
