Mofongo (Puerto Rico)

4 Green Plantains, Peeled and Cut into Chunks
120 ml. Olive Oil
2 Garlic Cloves, Minced
200 g. Pork Crackling, Crushed
Salt to Taste
Heat the oil in a large frying pan over medium heat. Add the plantain chunks and fry until golden brown.
Remove the plantains from the pan and drain on paper towels.
In a mortar and pestle, combine the fried plantains, minced garlic, crushed pork cracklings, and salt. Mash until the ingredients are well combined and the mixture is relatively smooth.
Shape the mixture into small balls or mounds. Serve hot as a side dish or appetizer.
