Sancocho (Dominican Republic)

500 g. Beef, Cut into Chunks
500 g. Chicken, Cut into Pieces
500 g. Pork, Cut into Chunks
1 Onion, Chopped
2 Garlic Cloves, Minced
2 Carrots, Chopped
1 Yuca Root, Peeled and Chopped
1 Plantain, Peeled and Chopped
400 g. Can of Corn, Drained
1 tsp. Oregano
1 tsp. Cumin
2 l. Water
60 ml. Olive Oil
Salt and Pepper to Taste
Heat the olive oil in a large pot over medium heat. Add the beef, chicken, and pork and brown on all sides.
Add the onion and garlic to the pot. Cook until softened.
Add the carrots, yuca, plantain, and corn to the pot. Stir to combine.
Add the oregano and cumin to the pot and stir well.
Add the water to the pot. Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the meat is very tender and the stew has thickened. You can add more water during cooking if needed.
Season with salt and pepper to taste. Serve hot, preferably with a side of rice.
