Curry Chicken (Trinidad and Tobago)

1 kg. Chicken, Cut into Pieces
1 Onion, Chopped
2 Garlic Cloves, Minced
2 tbsp. Curry Powder
1 tsp. Turmeric
1 tsp. Ground Cumin
1 tsp. Ground Coriander
500 ml. Chicken Broth
60 ml. Vegetable Oil
Salt and Pepper to Taste
Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the curry powder, turmeric, cumin, and coriander to the pot. Stir well to combine.
Add the chicken pieces to the pot. Cook, turning occasionally, until the chicken is browned on all sides.
Add the chicken broth to the pot. Bring to a simmer, cover, and cook for about 30 minutes, or until the chicken is cooked through. Season with salt and pepper to taste. Serve hot.
