Stewed Oxtail (Jamaica)

1 kg. Oxtail, Cut into Pieces
1 Onion, Chopped
2 Garlic Cloves, Minced
1 Scotch Bonnet Pepper, Chopped
1 tsp. Allspice
1 tsp. Thyme
500 ml. Beef Broth
60 ml. Vegetable Oil
Salt and Pepper to Taste

Heat the oil in a large pot over medium heat. Add the oxtail pieces and brown on all sides. Remove the oxtail and set aside.

In the same pot, add the onion, garlic, Scotch bonnet pepper, allspice, and thyme. Cook until the onion is softened.

Return the oxtail to the pot and add the beef broth. Bring to a simmer, cover, and cook for about 3 hours, or until the oxtail is very tender. Season with salt and pepper to taste.

Serve the oxtail hot, with a side of rice if desired.
