Fried Snapper (Jamaica)

4 Whole Red Snapper
120 ml. Lime Juice
1 tsp. Paprika
1 tsp. Thyme
500 ml. Vegetable Oil for Frying
Salt and Pepper to Taste
Clean the snapper and make several diagonal cuts on both sides. Marinate the fish in the lime juice, paprika, thyme, salt, and pepper for at least 30 minutes.
Heat the oil in a deep frying pan over medium-high heat. Add the snapper and fry until golden brown and crispy on both sides. Drain on paper towels.
Serve the fried snapper hot, with a side of rice and peas if desired.
