Run Down (Jamaica)

4 Mackerel Fillets
400 ml. Can Of Coconut Milk
1 Onion, Chopped
2 Garlic Cloves, Minced
1 Scotch Bonnet Pepper, Finely Chopped
2 Tomatoes, Chopped
1 tsp. Thyme
Salt and Pepper to Taste
60 ml. Vegetable Oil
Heat the oil in a large pan over medium heat. Add the onion, garlic, Scotch bonnet pepper, and thyme. Cook until the onion is softened.
Add the mackerel fillets and cook until they start to flake.
Add the coconut milk and tomatoes to the pan. Bring to a simmer and cook for about 20 minutes, or until the sauce has thickened. Season with salt and pepper to taste.
Serve the run down hot, with a side of rice if desired.
