Trinidadian Aloo Pie (Trinidad and Tobago)

500 g. Flour
2 tsp. Baking Powder
250 ml. Water
60 ml. Vegetable Oil
Salt to Taste
1 kg. Potatoes, Peeled and Chopped
1 Onion, Chopped
2 Garlic Cloves, Minced
1 tsp. Curry Powder
Salt and Pepper to Taste
Vegetable Oil for Frying

To make the dough, combine the flour, baking powder, and salt in a large bowl. Add the water and oil, mixing until a dough forms. Cover and set aside.

To make the filling, boil the potatoes until tender. Drain and mash.

Heat a small amount of oil in a frying pan over medium heat. Add the onion, garlic, and curry powder. Cook until the onion is softened.

Add the onion mixture to the mashed potatoes. Season with salt and pepper to taste.

Divide the dough into small pieces and roll out into circles. Spoon some of the potato mixture onto one half of each circle, then fold the dough over the filling and crimp the edges to seal.

Heat a large amount of oil in a frying pan over medium-high heat. Fry the pies until golden brown on both sides. Drain on paper towels.

Serve the aloo pies hot.
