Souse (Barbados)

Method

1 kg. Pork or Chicken, Cut into Pieces
1 Onion, Thinly Sliced
2 Limes, Juiced
1 Hot Pepper, Finely Chopped
Salt and Pepper to Taste

Boil the pork or chicken until fully cooked. Once cooked, drain and let cool.

Once the meat is cool, cut into bite-sized pieces and place in a large bowl.

Add the onion, lime juice, and hot pepper to the bowl. Mix well to combine. Season with salt and pepper to taste.

Cover the bowl and refrigerate for at least 4 hours, or overnight if possible.

Serve the souse chilled.
