Pepperpot (Guyana)

1 kg. Stewing Beef, Cut into Pieces
250 ml. Cassareep
1 Onion, Chopped
2 Garlic Cloves, Minced
2 Hot Peppers, Finely Chopped
1 tsp. Cinnamon (Ground)
1 tsp. Dried Thyme
Salt and Pepper to Taste
60 ml. Vegetable Oil
Heat the oil in a large pot over medium heat. Add the onion, garlic, and hot peppers. Cook until the onion is softened.
Add the beef to the pot and brown on all sides.
Add the cassareep, cinnamon, and thyme to the pot. Add enough water to cover the ingredients in the pot. Bring to a simmer, cover, and cook for about 2 hours, or until the beef is tender.
Season the stew with salt and pepper to taste.
Serve the pepperpot hot, with a side of rice or bread if desired.
