Curry Crab and Dumplings (Trinidad and Tobago)

In a large pot, heat the oil over medium heat. Add the onion, garlic, and Scotch bonnet pepper. Cook until the onion is softened.
Add the curry powder and cook for a minute, then add the crabs and cook until they start to turn red.
Add the coconut milk and enough water to cover the crabs. Bring to a simmer, cover, and cook for about 20 minutes, or until the crabs are cooked through.
While the crabs are cooking, make the dumplings. Combine the flour, baking powder, and salt in a bowl. Add the water and mix to form a dough. Divide the dough into small pieces and shape into dumplings.
Add the dumplings to the pot and cook for an additional 10 minutes, or until the dumplings are cooked through.
Season the curry with salt to taste. Serve the curry crab and dumplings hot.
