Conch Fritters (Turks and Caicos, Bahamas)

500 g. Conch Meat, Finely Chopped
120 g. Flour
1 Onion, Finely Chopped
1 Bell Pepper, Finely Chopped
1 Garlic Clove, Minced
1 Scotch Bonnet Pepper, Finely Chopped (Optional)
1 tsp. Baking Powder
250 ml. Milk
Salt and Pepper to Taste
Vegetable Oil for Frying
In a large bowl, combine the conch meat, flour, onion, bell pepper, garlic, Scotch bonnet pepper (if using), and baking powder. Add the milk and mix well to form a batter. Season with salt and pepper to taste.
Heat a large amount of oil in a frying pan over medium-high heat. Drop spoonfuls of the batter into the oil and fry until golden brown on all sides.
Drain the fritters on paper towels. Serve the conch fritters hot, with a side of tartar sauce or hot sauce if desired.
