Johnny Cakes (Various Islands)

500 g. Flour
1 tbsp. Sugar
1 tsp. Salt
2 tsp. Baking Powder
60 g. Unsalted Butter, Cold and Cubed
250 ml. Milk
Vegetable Oil for Frying
In a large bowl, mix together the flour, sugar, salt, and baking powder.
Add the cubed butter and rub it into the flour mixture with your fingers until it resembles coarse breadcrumbs.
Gradually add the milk, mixing until a dough forms.
Divide the dough into small balls, about the size of a golf ball.
Heat a generous amount of oil in a frying pan over medium heat. Fry the dough balls until golden brown on all sides, turning them to ensure even cooking.
Use a slotted spoon to transfer the Johnny Cakes to a paper towel-lined plate to drain excess oil.
Serve the Johnny Cakes warm. They can be enjoyed on their own or with butter, jam, or other toppings of your choice.
