Okonomiyaki

200 g. Flour
300 ml. Water
4 Eggs
400 g. Cabbage, Finely Shredded
200 g. Any Combination Of: Thinly Sliced Pork Belly, Shrimp, Squid, Or Other Proteins
60 ml. Okonomiyaki Sauce
Japanese Mayonnaise, Green Onions, and Bonito Flakes for Topping
In a large bowl, whisk together the flour and water until smooth, then whisk in the eggs.
Stir in the shredded cabbage and your chosen proteins.
Heat a bit of oil in a frying pan over medium heat, then ladle in a quarter of the batter, spreading it into a large, thick pancake.
Cover and cook until golden brown on the bottom, then flip and cook until golden on the other side.
Drizzle with okonomiyaki sauce and mayonnaise, and sprinkle with green onions and bonito flakes.
Repeat with the remaining batter.
