Omurice

Method
400 g. Cooked Rice
200 g. Chicken Breast, Diced
1 Onion, Diced
120 g. Ketchup
8 Eggs
Salt and Pepper to Taste
2 tbsp. Vegetable Oil
Heat the vegetable oil in a skillet, add the onion and chicken and cook until the chicken is fully cooked.
Add the cooked rice to the skillet and stir to combine, then stir in the ketchup. Season with salt and pepper.
Divide the rice mixture into four portions and set aside.
In a clean skillet, make four omelettes with the eggs.
Place each omelette on top of a portion of rice, then fold the omelette around the rice.
Serve with extra ketchup on top if desired.
