Tamagoyaki

6 Eggs
60 ml. Mirin
60 ml. Soy Sauce
2 tsp. Sugar
Vegetable Oil for Frying

In a bowl, beat the eggs and add the mirin, soy sauce, and sugar. Stir to combine.

Heat a small amount of oil in a tamagoyaki pan over medium heat.

Pour a thin layer of egg mixture into the pan and tilt to cover the bottom of the pan.

When the egg begins to set, roll it up towards one side of the pan. Then add more oil and pour another thin layer of egg in the pan, lifting the roll to let the egg flow underneath.

Continue this process until all the egg has been used.

Remove the omelette from the pan and let it cool, then slice into pieces.
