Zaru Soba

Method

400 g. Soba Noodles
240 ml. Soy Sauce
120 ml. Mirin
800 ml. Dashi Broth
4 Green Onions, Chopped
Wasabi Paste to Taste

Cook the soba noodles according to package instructions, then rinse under cold water until cool.

In a saucepan, combine the soy sauce, mirin, and dashi broth, and heat until hot.

Let the dipping sauce cool to room temperature.

Serve the cold soba noodles with the dipping sauce, chopped green onions, and wasabi on the side.
