Japanese, Main Course Vegan Lactose Free Nut Free, Noodles ( Udon Noodles)

Yaki Udon

400 g. Udon Noodles
2 Bell Peppers, Sliced
1 Onion, Sliced
2 Zucchini, Sliced
60 ml. Soy Sauce
2 tbsp. Vegetable Oil

Cook the udon noodles according to package instructions, then drain and set aside.

Heat the vegetable oil in a large frying pan or wok.

Add the vegetables and stir-fry until they're tender.

Add the noodles and soy sauce, and stir-fry everything together until the noodles are heated through and coated with the sauce.

Serve hot. Optionally, you can garnish the dish with green onions or sesame seeds.
