Castella (Kasutera)

6 Eggs
200 g. Sugar
150 g. Bread Flour
60 ml. Honey
30 ml. Milk
Preheat your oven to 180 degrees Celsius. Line a loaf pan with parchment paper.
Beat eggs, add sugar, and mix well. Warm the mixture in a double boiler until it reaches about 40 degrees Celsius.
Remove the bowl from the double boiler and whisk the egg mixture until white.
Add honey into the egg mixture.
Sift bread flour and add it to the bowl. Mix well until the flour is fully incorporated.
Pour the batter into the lined loaf pan and drop the pan lightly on the counter to raise the air bubbles out of the batter.
Bake for 10 minutes, then lower the heat to 150 degrees Celsius and bake for 40-50 minutes.
Remove from the oven and drop the pan lightly to prevent shrinking. Let it cool before serving.
