Tori no Mizutaki

Method
1 Chicken, Cut into Pieces
1 Chinese Cabbage, Cut into Pieces
1 Onion, Sliced
1 Tofu, Cut into Cubes
8 cups Water
Salt, to Taste
Ponzu Sauce, for Serving
Put the chicken, vegetables, and water in a large pot and bring to a boil.
Skim off any impurities that float to the top, then reduce the heat to low and let it simmer for about 1 hour
Add the tofu to the pot and cook for another 10 minutes.
Season the broth with a little salt.
Serve the chicken, vegetables, and tofu in bowls, with the broth. Ponzu sauce can be used as a dipping sauce for the ingredients.
