500 g. Fish Fillets
4 Banana Leaves for Wrapping
5 Shallots
3 Garlic
2 Large Red Chillies
1 cm. Fresh Turmeric
2 cm. Galangal
1 Lemongrass, Bruised
1 Kaffir Lime Leaf
Salt to Taste
Juice Of 1 Lime

Blend shallots, garlic, chillies, turmeric, and galangal in a food processor until it forms a paste.

Marinate the fish fillets in the paste, lemongrass, kaffir lime leaf, salt, and lime juice for at least 1 hour.

Place each fillet on a banana leaf. Fold the leaf over and secure each end with a toothpick to create a packet.

Steam the packets over boiling water for 20 minutes, or grill over charcoal until the banana leaves become brown.

Serve hot, with the fish still wrapped in the leaf.
