1 Pig, Cleaned
2 Lemongrass, Bruised
Salt to Taste
Pepper to Taste
10 Shallots
10 Garlic Cloves
5 Large Red Chillies
5 Bird's Eye Chillies
5 cm. Fresh Turmeric
5 cm. Galangal
5 cm. Ginger
2 tbsp. Coriander Seeds
1 tbsp. Black Peppercorns
3 Nutmeg
5 Cloves
Salt to Taste
Blend all the spice paste ingredients in a food processor until it forms a paste.
Rub the inside of the pig with the spice paste and lemongrass stalks.
Sew up the belly of the pig and place it on a spit.
Slowly roast the pig over a charcoal fire while continuously turning the spit.
It may take up to 6 hours to fully cook the pig. The skin should be crispy and the inside should be tender.
Chop the pig into serving pieces and serve with rice and sambal.
