500 g. Mackerel Fillets
100 g. Tapioca Starch
1 Egg
Salt to Taste
Pepper to Taste
10 Banana Leaves for Wrapping
5 Shallots
3 Garlic
2 Red Chillies
2 cm. Turmeric
2 cm. Ginger
Blend all the spice paste ingredients in a food processor until it forms a paste.
Blend mackerel, tapioca starch, egg, salt, pepper, and the spice paste in a food processor until smooth.
Place a spoonful of the mixture on a banana leaf. Fold the leaf over and secure each end with a toothpick to create a packet.
Grill the packets on a charcoal grill until the banana leaves become brown.
Serve hot, with the fish cake still wrapped in the leaf.
