Kerak Telor

200 g. Glutinous Rice
4 Eggs
100 g. Desiccated Coconut
2 tbsp. Sugar
1 tsp. Salt
100 g. Dried Shrimp
2 Shallots, Thinly Sliced
Vegetable Oil for Frying
Soak the glutinous rice in water for 2 hours, then drain.
In a pan, heat oil over medium heat. Fry the shallots until crispy and golden. Set aside.
In the same pan, fry the dried shrimp until crispy. Set aside.
Mix desiccated coconut, sugar, and salt. Fry in a dry pan until golden brown.
In a small pan, make a thin layer of glutinous rice. Crack an egg over the rice and spread it evenly. Cook over low heat until the egg is set and the rice is crispy.
Serve kerak telor with the fried shallots, dried shrimp, and coconut mixture on top.
