Brezeln (Pretzels)

500 g. All-Purpose Flour
1 Active Dry Yeast (Approximately 7 G)
1½ tsp. Salt
1 tbsp. Sugar
300 ml. Warm Water
50 g. Baking Soda
1 l. Water (For Boiling)
Coarse Salt, for Sprinkling

In a large bowl, combine the flour, yeast, salt, sugar, and warm water. Knead until the dough is smooth and elastic, about 10 minutes.

Let the dough rise in a covered bowl for 1 hour, or until it doubles in size.

Preheat your oven to 200°C (390°F). Divide the dough into 8 equal pieces. Roll each piece into a long rope, then twist into a pretzel shape.

Bring the 1 liter of water to a boil in a large pot. Add the baking soda.

Boil each pretzel for 30 seconds per side, then place on a baking sheet lined with parchment paper.

Sprinkle the pretzels with coarse salt, then bake for 20-25 minutes, or until golden brown.

Allow to cool on a wire rack before serving.
