Käsespätzle

4 Eggs
400 g. All-Purpose Flour
1 tsp. Salt
50 ml. Water (As Needed)
200 g. Emmental Cheese, Grated
2 Onions, Thinly Sliced
2 tbsp. Butter
To make the spätzle, mix together the eggs, flour, and salt. Gradually add water until the batter is smooth and somewhat elastic.
Bring a large pot of salted water to a boil. Using a spätzle maker or a colander with large holes, press the batter into the boiling water. Cook until the spätzle floats to the surface, then remove with a slotted spoon and rinse under cold water.
In a skillet, melt the butter over medium heat. Add the onions and cook until browned and crispy.
In a separate pan, add a layer of spätzle, a layer of cheese, and another layer of spätzle. Cook over low heat until the cheese is melted. Top with the crispy onions before serving.
