Bratkartoffeln (Fried Potatoes)

1 kg. Potatoes, Boiled and Sliced
3 tbsp. Vegetable Oil
2 Onions, Sliced
100 g. Bacon, Diced
Salt and Pepper to Taste
2 tbsp. Parsley, Chopped
Heat the oil in a large pan over medium-high heat. Add the bacon and fry until crispy.
Add the onions to the pan and fry until they are golden brown.
Add the sliced potatoes to the pan, spreading them out in an even layer. Cook without stirring for a few minutes to allow them to brown on one side, then stir and let them brown on the other side.
Season with salt and pepper. Garnish with chopped parsley before serving.
