Central European, Component Vegetarian Nut Free, Potatoes (Peeled,Sliced) Cheese - Cottage

Pierogi (Poland)

500 g. Plain Flour
1 Egg
250 ml. Warm Water
1 tsp. Salt
500 g. Potatoes, Peeled and Chopped
200 g. White Cheese (Farmers Cheese, Cottage Cheese)
1 Onion, Finely Chopped
2 tbsp. Butter
Salt and Pepper to Taste

To make the dough, combine the flour, egg, water, and salt, kneading until smooth. Cover and let rest for 20 minutes.

Boil the potatoes until soft, then drain and mash.

In a pan, melt the butter and sauté the onions until golden. Combine the onions with the mashed potatoes and cheese. Season with salt and pepper.

Roll out the dough on a floured surface. Cut out circles using a glass or cookie cutter.

Place a spoonful of the filling in the middle of each circle. Fold over and press the edges together to seal.

Boil a large pot of salted water. Cook the pierogi a few at a time until they float to the top. Remove with a slotted spoon and drain on a paper towel.
