Central European, Main Course Nut Free, Potatoes (Peeled,Sliced) Cheese - Feta Back Bacon

1 kg Potatoes, Peeled and Grated
300 g Flour
1  Egg
1 tsp Salt
250 g Sheep Cheese (Bryndza), Or Substitute With Feta
200 g Bacon, Diced
Butter for Serving

In a large bowl, mix together the grated potatoes, flour, egg, and salt to form a sticky dough.

Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the dough through directly into the boiling water.

Cook the dumplings until they float to the surface, then drain.

In a pan, fry the bacon until crispy.

Mix the cooked dumplings with the sheep cheese and a bit of melted butter.

Top the dish with the crispy bacon.
