Central European, Main Course Nut Free, Cheese - Feta

Bryndzové Pirohy (Slovakia)

500 g Plain Flour
1  Egg
250 ml Warm Water
1 tsp Salt
500 g Sheep Cheese (Bryndza), Or Substitute With Feta
2  Medium Potatoes, Boiled and Mashed
Salt and Pepper to Taste
200 g Bacon, Diced

To make the dough, combine the flour, egg, water, and salt, kneading until smooth. Cover and let rest for 20 minutes.

In a bowl, mix the cheese and mashed potatoes, season with salt and pepper.

Roll out the dough on a floured surface. Cut out circles using a glass or cookie cutter.

Place a spoonful of the filling in the middle of each circle. Fold over and press the edges together to seal.

Boil a large pot of salted water. Cook the pirohy a few at a time until they float to the top. Remove with a slotted spoon and drain on a paper towel.

In a pan, fry the bacon until crispy and pour it over the pirohy.
