Rösti (Switzerland)

1 kg. Potatoes
2 tbsp. Butter
Salt and Pepper to Taste

Boil the potatoes in their skins until just tender. Let cool, then peel.

Coarsely grate the potatoes and season with salt and pepper.

Heat the butter in a frying pan. Add the grated potatoes and press down with a spatula.

Cook over medium heat for about 10 minutes until a crust forms.

Flip the rösti over (you can use a plate to help you do this) and cook for another 10 minutes on the other side.
