Cevapcici (Balkans)

½ kg. Ground Beef
¼ kg. Ground Pork
¼ kg. Ground Lamb
1 Large Onion, Finely Chopped
2 Cloves Garlic, Minced
1 tsp. Salt
½ tsp. Ground Black Pepper
1 tsp. Paprika
2 tbsp. Sparkling Water
Cooking Oil for Grilling

In a large bowl, mix together the ground beef, pork, lamb, chopped onion, minced garlic, salt, pepper, and paprika.

Add the sparkling water and knead until well combined.

Cover the bowl and let it marinate in the refrigerator for at least 2 hours.

Form the meat mixture into sausage shapes.

Preheat the grill or broiler. Lightly oil the grates or broiler pan.

Cook the cevapcici, turning occasionally, until browned and cooked through, about 10 minutes.

Serve with flatbread and ajvar or tzatziki sauce, if desired.
