500 g. All-purpose Flour
1 Egg
200 ml. Water
1 tsp. Salt
500 g. Potatoes, Peeled and Cubed
1 Large Onion, Finely Chopped
2 tbsp. Butter
Salt and Pepper to Taste

Start with the dough: In a large bowl, combine the flour, egg, water, and salt. Knead until smooth. Let it rest for 30 minutes.

For the filling: Boil the potatoes until tender, then drain and mash.

In a pan, sauté the chopped onion in butter until golden brown. Mix into the mashed potatoes and season with salt and pepper.

Roll out the dough thinly and cut out circles using a round cookie cutter or glass.

Place a small amount of the potato filling in the center of each dough circle.

Fold the dough over to form a half-circle, then pinch the edges to seal.

Bring a large pot of salted water to a boil. Cook the varenyky until they float to the top, then simmer for 2-3 more minutes.

Drain and serve with sour cream and a sprinkle of chopped fresh dill.
