Blini (Russia)

200 g. All-purpose Flour
500 ml. Milk
2 Eggs
2 tbsp. Sugar
½ tsp. Salt
2 tbsp. Vegetable Oil, Plus More for Frying

In a large bowl, mix together the flour, milk, eggs, sugar, salt, and vegetable oil until smooth.

Heat a small amount of oil in a non-stick pan over medium heat.

Pour a ladleful of batter into the pan, tilting it to spread the batter evenly.

Cook until the edges of the blini start to lift from the pan, then flip and cook the other side until golden brown.

Repeat with the remaining batter.

Serve hot with your preferred toppings, such as sour cream, caviar, or smoked salmon.
