Eastern European, Main Course Vegetarian Nut Free, Cheese - Feta

Banitsa (Bulgaria)

1 Package Phyllo Dough (About 450 Grams)
300 g. Bulgarian Feta Cheese Or Sirene, Crumbled
3 Eggs
100 g. Butter, Melted
50 ml. Vegetable Oil
1 tsp. Baking Soda
200 ml. Yogurt

Preheat your oven to 180°C and grease a baking dish.

In a bowl, whisk together the crumbled cheese, eggs, baking soda, and yogurt.

Unroll the phyllo dough and cover with a damp cloth to keep it from drying out.

Take a sheet of phyllo, brush it with the melted butter, and spread some of the cheese mixture on top.

Roll the sheet up loosely and arrange it in the baking dish. Repeat with the remaining sheets and cheese mixture.

Brush the top of the banitsa with vegetable oil and bake for about 30 minutes, until golden brown.

Allow the banitsa to cool for a bit before slicing and serving.
