Syrniki (Russia)

500 g. Farmer's Cheese Or Ricotta
2 Eggs
4 tbsp. Sugar
1 tsp. Vanilla Extract
½ tsp. Salt
70 g. All-purpose Flour, Plus More for Dusting
Vegetable Oil for Frying
In a bowl, combine the cheese, eggs, sugar, vanilla extract, and salt.
Gradually add the flour, mixing until the dough is thick and holds together.
With floured hands, form the dough into small patties.
Heat the vegetable oil in a frying pan over medium heat.
Fry the syrniki, a few at a time, until golden brown on both sides.
Drain the syrniki on paper towels and serve warm with sour cream, jam, or honey.
