Finnish Rye Bread (Ruisleipä)

500 g. Rye Flour
500 g. Whole Wheat Flour
2 tsp. Salt
25 g. Fresh Yeast
1.2 l. Water
1 tbsp. Honey
Combine rye flour, whole wheat flour, and salt in a large bowl.
Dissolve the yeast in a bit of warm water (taken from the 1.2L), then add it to the flour mixture.
Add the rest of the water and the honey, and mix until a sticky dough forms.
Cover the bowl with a clean towel and let the dough rise for about 2 hours.
Preheat the oven to 200°C and line a baking tray with parchment paper.
Divide the dough into two, and shape each half into a round loaf. Place them onto the prepared tray.
Bake for about 60-70 minutes, or until the bread sounds hollow when tapped on the bottom.
Let the bread cool on a wire rack before slicing.
