Icelandic Lamb Soup (Kjötsúpa)

Method

1 kg. Lamb Shoulder, Cut into Pieces
2 l. Water
1 Onion, Chopped
2 Carrots, Peeled and Chopped
3 Potatoes, Peeled and Chopped
1 Leek,chopped
200 g. Swede/rutabaga, Peeled and Chopped
1 tsp. Salt
½ tsp. Black Pepper
½ tsp. Dried Thyme
½ tsp. Dried Oregano

In a large pot, bring the lamb and water to a boil.

Skim off any foam that forms on the surface, then add the onion to the pot.

Cover and let simmer for about 45 minutes.

Add the chopped vegetables and herbs to the pot, then season with salt and pepper.

Cover and let simmer for about 30 minutes, or until the vegetables are tender.

Adjust seasoning if necessary, then serve hot.
