Norwegian Klippfisk (Bacalao)

500 g. Klippfisk (Dried and Salted Cod)
2 Onions, Sliced
4 Potatoes, Peeled and Sliced
1 Red Bell Pepper, Sliced
4 Tomatoes, Sliced
2 Garlic, Minced
500 ml. Olive Oil
1 Chili Pepper, Chopped
100 g. Green Olives
1 Fresh Parsley, Chopped

Soak the klippfisk in cold water for 24 hours, changing the water 2-3 times.

Rinse the fish, then boil it for about 20 minutes, or until it flakes easily. Drain and let it cool.

Flake the fish into large pieces, removing any bones.

In a large pot, layer the onions, potatoes, bell pepper, tomatoes, garlic, and flaked fish.

Pour the olive oil over the ingredients, then add the chopped chili pepper and green olives.

Cover the pot and simmer for about 2 hours, or until the vegetables are tender.

Garnish with fresh parsley before serving.
