Danish Pickled Herring (Sild)

4 Fresh Herring Fillets
250 ml. White Vinegar
200 g. Sugar
1 Onion, Thinly Sliced
10 Whole Peppercorns
2 Bay Leaves
4 Whole Allspice Berries
Rinse the herring fillets under cold water, then cut them into bite-sized pieces.
In a saucepan, combine vinegar, sugar, peppercorns, bay leaves, and allspice. Bring to a boil, then remove from heat and let it cool.
Place the herring and onion slices in a jar, then pour the cooled pickling liquid over them.
Close the jar and refrigerate for at least 48 hours before serving.
