Finnish Salmon Soup (Lohikeitto)

1.2 l. Water
500 g. Potatoes, Peeled and Diced
1 Leek, Thinly Sliced
2 Carrots, Peeled and Diced
500 g. Fresh Salmon Fillets, Skin Removed and Diced
250 ml. Heavy Cream
1 Fresh Dill, Chopped
Salt
White Pepper

In a large pot, bring the water to a boil.

Add the potatoes, leek, and carrots to the pot, then reduce the heat and let simmer for about 10 minutes.

Add the diced salmon to the pot and let it cook for about 5 minutes, or until the salmon is cooked through.

Stir in the heavy cream and fresh dill, then season with salt and white pepper.

Heat the soup for a few more minutes, but do not let it boil.

Serve hot, garnished with more dill if desired.
