Spanakopita (Greece)

500 g. Spinach, Washed and Drained
200 g. Feta Cheese, Crumbled
1 Medium Onion, Finely Chopped
2 Eggs, Beaten
2 tbsp. Olive Oil
½ tsp. Ground Nutmeg
Salt and Pepper to Taste
200 g. Filo Pastry
100 g. Melted Butter
Preheat the oven to 180°C.
In a large pan, heat the olive oil over medium heat. Add the onion and cook until translucent.
Add the spinach and cook until wilted. Remove from heat and let it cool.
Once cool, mix in the crumbled feta, beaten eggs, nutmeg, salt, and pepper.
Layer half of the filo sheets in a baking dish, brushing each sheet with melted butter. Spread the spinach and feta mixture on top.
Cover with the remaining filo sheets, brushing each with more melted butter.
Bake in the preheated oven for about 45 minutes or until the pastry is golden brown and crisp. Let it cool slightly before cutting into squares to serve.
