Central Asian, Main Course Gluten Free Lactose Free Nut Free, Short Cut Leg Lamb

Method

500 g. Lamb (Leg Or Shoulder), Or Beef (Sirloin Or Flank Steak), Cut into Thin Strips
2 Bell Peppers, Thinly Sliced
2 Onions, Thinly Sliced
2 Tomatoes, Chopped
1 Eggplant, Cut into Thin Strips
2 Garlic, Minced
500 g. Fresh Or Dried Noodles
Salt and Pepper to Taste

In a large pot, boil water and cook the noodles according to package instructions.

In a separate pan, heat some oil and sauté the onions until they become translucent.

Add the meat to the pan and brown it.

Add the peppers, eggplant, and tomatoes to the pan. Sauté until they are soft.

Add the garlic and season with salt and pepper.

Drain the noodles and combine them with the meat and vegetable mixture.
