Central Asian, Main Course Gluten Free Lactose Free Nut Free, Lamb Cubes

Paloo (Tajikistan)

1 cup Long Grain Rice
500 g. Lamb Or Beef, Cut into Small Cubes
3 Carrots, Sliced
1 Onion, Sliced
3 tbsp. Vegetable Oil
1 tsp. Cumin
1 tsp. Turmeric
2 cups Water
Salt and Pepper to Taste

Rinse the rice under cold water until the water runs clear. Soak the rice in warm water for 30 minutes, then drain.

In a large pot or deep skillet, heat the oil over medium heat. Add the meat and cook until browned on all sides.

Add the carrots and onions to the pot and cook until softened.

Stir in the cumin, turmeric, salt, and pepper.

Add the drained rice to the pot and stir to combine everything.

Pour in the water and bring to a boil. Lower the heat, cover the pot, and let it simmer until the rice is cooked and the water is absorbed, about 15-20 minutes.

Fluff the rice with a fork before serving.
