Hummus (Levant)

Method

250 g. Chickpeas, Soaked Overnight and Boiled Until Tender
60 ml. Lemon Juice
60 ml. Tahini
2 Garlic Cloves, Crushed
30 ml. Olive Oil
½ tsp. Salt
Pinch Of Paprika, for Garnish
1 Sprig Of Fresh Parsley, Chopped, for Garnish

In a food processor, combine the chickpeas, lemon juice, tahini, crushed garlic, olive oil, and salt.

Blend until smooth, adding a little water if necessary to achieve the desired consistency.

Transfer the hummus to a serving dish and garnish with paprika and chopped parsley.
